Paleo Recipe O' the Day:
Veggie Fritters....YUMMY!
3/4 cup grated zucchini (squeeze juice out)
3/4 c shreeded carrots
2/3 cup of another vegetable (mushrooms or chopped broccoli work well)
1/2 c almond meal
2 eggs
Olive oil
Free form all ingredients except olive oil into patties and fry until brown in olive oil. Takes about 6 minutes

I think this is it:
1 c almond flour (i think to tweak the recipe, i would also put a couple tbsp of almond butter for consistency)
3/4 c unsweetened coconut
dried fruit (unsweetened of course) of your choice, 1/2 cup (something that goes well with the carob would be blueberries, possibly...oooh! or cherries!)
4 tbsp carob powder
2 eggs beaten
2 tbsp olive oil
Cinnamon to taste
I also added some stevia to sweeten, but that's your choice.
Mix altogether. Roll into 1" balls then flatten with fingers on non-stick cookie sheet (no bad jokes, please). Bake on 400 for 20-25 minutes.
If we tweak this recipe, I think it has the potential to be really, really good. When you make them, if you change anything, let me know. We'll have to work on this one together. Amber had some really good suggestions...I just can't remember all of them. I know she suggested the almond butter.

Another recipe:
Coconut chicken
This is kinda thrown together too…
In a med bowl combine almond meal and coconut flakes (depends on how many pieces of chicken you plan to use)
In a small bowl beat 1 egg
Dip chicken breasts or strips into egg, then mixed bowl
Pan fry in coconut oil

i am excited about the veggie patties and the coconut chicken! yum! i made the flax seed bread again this weekend. so good! you gotta try it. kyle's recipe: 1 cup flax seed, I like to soak for 6 hrs
Any combo of veggies and herbs, In summer I will use two fresh tomatoes, and 2 tablespoons of hot curry powder and pinch of salt to taste. I blend the whole mixture in vita mix and make it the consistency of pancake batter and gently spread on baking sheets to tortilla thickness and shape and leave over night on the lowest temp your oven has. In the am you can flip and usually the other side only needs a short time.
If you don't have a vita mix I would grind the flax in a coffee grinder dry and just blend with veggies and herbs.
In winter I use sun-dried tomatoes. I also like garlic rosemary and other herbs

update: i made the veggie fritters last night and they were really, really good! i had to use flax seed meal b/c i didn't have any almond meal. i also added minced garlic, onion powder and pepper. it was nice to have something "fried!" i chopped all veggies in the food processor. the carrots were still crunchy which added a really good texture. some chopped chicken or fish added to the mix for a complete meal would've been a good addition. a dipping sauce would be a good addition to the finished product....maybe some paleo mayo? but i didn't have time for all that so i chowed down as they were!
i'll make the coconut chicken this weekend...didn't have time to get to whole foods last night!
